 INGREDIENTS:

 For Dhokla:

 * Water - 1 Cup

 * Sugar - 4 Tbsp

 * Salt - 1 Tsp

 * Citric Acid(Citric Acid/Lemon Extract) - 1 Tsp

 * Turmeric Powder - 1/4 Tsp

 * Gram Flour (gram flour) - 2 Cup

 * Oil - 2 Tbsp

 * Water - 2 Tbsp

 * Baking Soda - 1 Tsp

 * Water - 1/2 Cup


 For Tadka:

 * Oil - 1-2 Tsp

 * Black Mustard Seeds (Rye) - 1/2 Tsp

 * Curry Leaves - Some

 * Green Chilli - 4-5

 * Water - 1 Cup

 * Coriander Leaves - For Garnishing

Method:

 In a pan, take some water and place a ring, cover it and keep it boiling.  Take a cake tin or tray, grease some oil, and keep it aside.

 For Dhokla Batter, in a bowl, put some Water, Sugar, Salt, Citric Acid & Turmeric Powder.  Whisk well till the sugar is dissolved properly.  Then add some Gram Flour without sieved & whisk properly with the whisker.  Cover it & keep it for 15 minutes.  Then put some Oil & whisk it again for 5 minutes.  Then put some Water & Baking Soda in the batter & mix it again.  Quickly pour the Dhokla Batter into a greased tin and keep the tin in the pan.  Cover it & give it steam on high flame for 20-25 minutes.  Check it by using a toothpick, then turn the flame off & put the Water on the ready Dhokla & keep it to cooling down.  Then take it out on a plate and cut it into pieces.

 For Tadka, put Oil, Mustard Seeds, Curry Leaves, long chopped Green Chilies & some Water.  Boil once & put the Tadka on the Dhokla.  Garnish the Spongy Dhokla with Coriander Leaves & enjoy it.
